Cheesy Vegan Stir Fry With Macaroni

This is a new take on the classic stir fry. It may be “weird”, as my husband likes to call my dishes, but it is good.
1/2 block tofu, sliced and diced

1/4 cup seasoned breadcrumbs

2 tablespoons soy sauce

1 tablespoon olive oil

1/2 package frozen bell pepper and onion mix

1/2 package frozen green beans, French style

1 15 oz. can diced tomatoes

1 package shredded soy mozzarella cheese

1/3 bag elbow macaroni, prepared

Prepare macaroni according to package directions. Meanwhile, heat olive oil in pan, then place tofu and breadcrumbs in pan. Fry until semi-crispy; add soy sauce, and cook until soy sauce is gone. Add green beans and bell pepper/onion mix. Cook for 5-10 minutes, or until vegetables are not frozen, and are cooked thoroughly. Read the rest of this entry »
